Let There be Silence

One man’s Mozart is another man’s poison. Music divides. So why do hotels insist on inflicting their musical tastes on their guests? ‘Music at dinner is an insult to both the cook and the musician,’ noted G.K. Chesterton. Or in Gordon Ramsay’s blunter version: ‘If you walk into a restaurant and music is being played, you know the food is crap.’ So what is wrong with silence?

The Guide makes a point of asking hotels what their policy is on background music. They often reply proudly that they have installed the latest Bang and Olufsen hi-fi system which they play to their guests, morning, noon, and night. One hotelier told us:’I am tone deaf. I have six CDs which I play in rotation, as they will probably like at least one of them.’ There may, I accept with reluctance, be a case for a little light music to ease the chill of a totally empty dining room. But too many hoteliers use background music as an all-purpose battering ram. One visitor to a designer hotel in Glasgow complained of ‘wall to wall music with the kind of low beat that rattles your fillings at breakfast’. I know just what he means. At a Relais and Chateau hotel on Little Palm Island, just off the Florida Keys, my mid-morning coffee was going splendidly until interrupted by some raucous modern jazz. As I was alone in the restaurant, I asked the waitress for it to be turned off so I could listen instead to bird song and the waves. ‘Sure’, she said. Five minutes later the music was still blaring out, I asked again. ‘Sure, no problem’, again without any result. That prompted direct action. I went to the console and ripped out every wire I could see. Bliss, birds and the sound of waves were back..

Vandalism? Ironically by far the most effective deterrent against yobbery is piped classical music which teenagers en masse can’t stand. Pipedown, an admirable pressure group which campaigns for silence, has no yobs but many distinguished musicians amongst its members, including Alfred Brendel, Lesley Garrett and Julian Lloyd Webber. The Hotel Guide is pleased to be one of its supporters. We all have our prejudices and Muzak is mine.

Go Ahead! Play With Your Food!

Growing up, when it came to manners, there was always an endless stream of wisdom paired with healthy doses of scolding at the dinner table; “chew with your mouth closed,” “eat your vegetables,” and of course, “don’t play with your food.” It was always one rule or another, but really who decided we shouldn’t play with our food in the first place?

At the Diamond Knot Brewery & Alehouse manners are gently nudged aside and in their place, a fun and rebellious spirit takes hold. Inside the flood of conversation and laughter echoes around sturdy wooden beams and the open plank ceiling in this nautical themed alehouse. A casual crowd lingers over pints of fresh brewed beer and the crunch under foot are the remnants of peanuts placed on every table. Yes, it is perfectly acceptable to discard your peanut shells on the floor here; a freedom which at first is a bit disconcerting, but eventually quite liberating! But please keep in mind that the haze of peanut dust on every surface may just put a damper on the dining experience for those with severe peanut allergies.

The peanuts, however, are just the beginning. With the introduction of the Stonegrill Concept into various portions of their menu, Diamond Knot enables their customers to take a unique interactive approach to their meal. Searing hot lava rocks (about 750 degrees F) are presented with raw meat, sides and sauces for your cooking pleasure at the table. You’ll never want for that perfectly cooked steak again! But if the idea of starting your meal with a piece of raw meat on your plate makes you a tad squeamish, try ordering one of their hand thrown pizzas to accompany your delicious pint instead. Either way, sit back, relax and play with your food…no one will scold you for it here.

The Recession’s Silver Lining

Michael Cooper, owner of Cnapan, a Welsh restaurant-with-rooms, which has been in the Guide for more than 20 years, tells me he has been running at 90% capacity since March. Michael Pritt, the third generation of his family to run the Wentworth Hotel in Aldeburgh, reports being “frantically busy”. Even hotels on islands, such as Foveran on the Orkneys, run by the Doull family, say they have been almost fully booked throughout the summer. Another remote hotel, Star Castle in the Scilly Isles, owned by Robert and James Francis, has been swamped with inquiries from the GHG’s website (www.goodhotelguide.com), helped by the fact that it won our César award this year for best Island hotel.

What explains the rush? Part of the answer is that hotels in the Guide are by definition at the very top of the tree. Their experience may not be typical of less skilfully run establishments. The strength of the Euro, the tedium of air travel, and fast-rising air fares, have also persuaded many holiday makers of the merits of home tourism. VisitBritain, the official tourist body, says that an extra five million Britons are considering spending part or all of their holidays at home this year. All this is a great opportunity for British hotels, inns and B&Bs to show just how enjoyable a home break can be. And judging by the large numbers of tourists swarming all over London, foreigners know that we are a good-value destination. This week, as I wandered around Hyde Park, I hardly heard a word of English spoken. Why go abroad when you can meet them all here?
